This one's for the inner child, celebrating all things simple and good. Super forgiving recipe --just taste as you go!

Ingredients:
For the crust:
300g oreos
80g butter
For the cheesecake filling:
700g cream cheese
50g sugar
340g peanut butter (one small jar)
500ml double cream
225g jam of choice (I used blackcurrant jam)
Instructions:
Prepare crust:
Combine 300g crushed oreos and 80g melted butter. Press into 10 inch springform pan and chill for at least half hour or longer in the freezer. It's ready when the crust feels firm to touch and no longer crumbly.
Prepare cheesecake filling:
Prepare filling Combine 700g cream cheese, 50g sugar and 340g peanut butter. Taste and add sugar/salt as necessary.
Whip 500ml double cream to soft peaks and fold into mixture.
Assemble the cheesecake:
Assemble by layering cheesecake filling with jam. Swirl it around, leave it in blobs, do whatever makes your inner child happy!
Chill for a few hours/overnight before serving.
